Roaster's Notes
Colombian coffees always show clean and complex flavors, and Gabriel Castaño Buendía's Pink Bourbon goes a step beyond. Gabriel is known for introducing Pink Bourbon to his fellow producers, cultivating it to produce a truly exquisite cup of coffee. This single estate, single varietal microlot was carefully hand-selected for ripeness and was treated to a prolonged fermentation. The pink coffee cherries were weighed and kept intact for 70 hours, after which they were fermented for another 70 hours in tanks. The beans were then washed and put out to dry on parabolic dryers for 15 to 20 days. The result of Gabriel's focused cultivation is a coffee that is incredibly sweet, resulting in a cup filled with the taste of delicate fruits and chocolate cake.
